Portobello Mushroom Pizza

I don’t know about you, but when I went gluten-free for my Hashimoto’s, a slice or two of pizza was the one thing I missed the most.

I crave a really good Canadian bacon, mushroom, and olive pie. I’ll settle for pepperoni.

When I went keto, I started making a “plate pizza”. Just add all the toppings to a plate and microwave until the pepperoni gets sizzling hot and a little crispy. Easy to pack and make at work.

Then, I tried making a pizza with a mushroom as the crust. It’s even better. You really won’t miss the bread (or the gluten substitute that is supposed to be like bread).
